AUGUST LONG TABLE DINNER

Gather. Over the past year that word has been a primal focus of mine.

It’s a word that represents the gathering of people, from all walks of life, with unique stories, together at a table. It represents gathering with respect the blessings from the earth and sea to nourish ourselves and our loved ones with the most unprocessed and untouched foods. It represents gathering of creative collaborative ideas and people, to bring an idea to life.

I’ve been manifesting this word as much as possible over the past year, and I’ve been so lucky to have it come to fruition many times in different ways. One of my favourite and most special ways was an event we held on my parents acreage in Kitimat over the summer. It was a last minute idea that took plenty of hands but is one that I’ve been dreaming of for a long time, highlighting so many special pieces of home.

KELP BLANKETED SALMON + WHITE WINE ASPARAGUS + FIRE GRILLED CORN

Living in the city, my partner and I spend one afternoon a week cooking together. We take our time, making the entire afternoon and evening about preparing our meals for the week ahead. I look forward to these Sunday's together where we can relax and cook at our own pace, laugh, experiment, and enjoy the process of creating and enjoying meals together. The rest of the week our dinners are quick combinations of what we've prepared and don't get eaten until well after the sun has gone down. Last summer we flew up North to head out on the ocean for ten days. During our trip, every day felt like Sunday. Our days revolved around this ritual, letting the creative flow come in with the waves as it does with the absence of pressure.

SEASIDE COCONUT CLAM LINGUINE

Clam Island

A non-official name for an official oasis that is a tiny secluded island in the Pacific Northwest of Canada. Named by my dad, with good reason. A best kept secret that I hope stays as pristine as the first time he discovered it.

At high tide, this place is nothing short of magic. a protected bay with a perfect beach for cooking up a meal over fire. But at low tide, something even more special happens, the clam harvest.

KALE CAESAR SALAD W TOASTED NUT PARM + SHAVED ASPARAGUS

I created this kale caesar salad with toasted nut parmesan, shaved asparagus, and sugar peas naturally free of dairy + gluten and full of fibre, antioxidants, vitamins and minerals. This recipe is simple, hardy, and keeps well in the fridge. Not only is it delicious, it carries a special purpose that I'm excited to share with you.

NOT YOUR AVERAGE EGGO - GF + DF WAFFLES

Light and fluffy on the inside, crunchy on the outside.. These are what waffle dreams are made of.

I've been dreaming of this texture since I gave up wheat and dairy years ago. I've tried to fill the void with different pancake variations but the little kid in me has been screaming for chocolate chip Eggo's. This past weekend I finally picked up a waffle maker of my own. After some serious deliberation about whether I needed the $120 rotating waffle iron, the interchangeable griddle or the high-end ceramic Belgian style I decided on the cheapest one on the shelf despite the unconvincing photo on the front; I wasn't sure the waffle life was for me yet.

Update: the waffle life is the life for me and I want it to be the life for you too.
